Mmm... Beer!



                Last Tuesday I hosted a farm tour for a class of college students. Occasionally, situations like that will pop up on the farm. At one point, the group was inside Greenhouse 2, where I described how the greenhouses are utilized during a given season. One of the teachers noticed a five gallon bucket full of full beer cans sitting near the entrance.
                “What is the beer for?” she asked.
                “To kill the pain,” was my immediate response. And in ways, that sarcastic reply is actually quite accurate. But allow me to explain.
                In 2002 I bought my first greenhouse kit. It is actually what is known as a “hoop house” or “high tunnel”. Essentially, it is a plastic covered structure that consists of bent steel bars that act as support. My structure is very simple. It is true that in years past I heated the structure with a propane heater, which was a monumental waste of money. Lately, for the most part, the only heat is ambient heat, but heat is not the point of this entry. I shall move on.
                For the most part, the first greenhouse was purchased in order to start seeds for the field crops I would eventually need. Since I was, and am, certified organic by the Maryland Department of Agriculture, it was/is required to use certified organic transplants only in the fields. Since no source for certified organic transplants existed, my only course was to start my own transplants from certified organic seeds, which luckily enough, was/is available to order through certain seed catalogs.
                Now, seed starting remains an important aspect of greenhouse operation on the farm. However, it is only a portion at this point. The floor of the greenhouse consists of dirt, certified organic dirt. The greenhouses currently are used also to extend the growing seasons. Where some crops such as lettuce, spinach and beets are seeded in the fields at the beginning of April, those same crops can be seeded in the greenhouses at the beginning of March. This gives a month head start to the season. The greenhouse protection also allows for crops to grow further into the fall as well.
                I remember back in 2002, with VERY WIDE eyes, watching a presentation on hoop house growing at a sustainable farming conference. The thoughts, the ideas that went through my head! Wow! What amazing potential these structures offered…
                Now, ten years later, I can safely say that, yes, there is great potential with the structures, BUT, there are also a myriad of obstacles. (No one ever seems to relay the obstacles for some reason…) And after struggling to create that perfect “Idyllia” within the greenhouses, I realize that I am as removed from that fictitious arena as when I started, albeit with a depot more of experience. Perhaps one day I shall scribe an entire book on the subject, but until then… and once again in an attempt at some brevity… I will focus on one aspect of greenhouse production… and this is where the beer enters the scene.
                Each of my greenhouses consist of 20 beds for growing approximately 4’ x 8’. For most of the years that I have used these beds, after seeding the lettuce, spinach, beets or carrots, there would be a noticeable lack of sprouts near the outside base board. Notice the lack of carrot sprouts (the green in the picture) toward the top of the picture, which is the outside base board. For years I noticed this, but never fully figured out what the culprit was, other than it was obvious damage due to some form of critters. For a long time, I thought it was mice/vole/mole/chipmunk damage. I lost count of how many traps I bought for those filthy creatures, (only about ten percent actually worked), and quite a few victims were found as a result. But,… the damage remained.
                Over the years, I had noticed some slug damage, and last year, I began to suspect that they were the cause and not the multitude of small furry creatures that invade the greenhouse. At dusk, with a flashlight, (slugs work mostly at night), I went into Greenhouse 1 and surveyed the carrot sprouts, lettuce sprouts, etc. Sure enough, from under the outside base board slid an army of slugs. I was dumbfounded as to how many there were. It literally looked like a full frontal assault. Straight out from under the base board, slugs slid down the rows to attack their meal. After so many years, I finally had my answer and it was quite clear. The damage now made complete sense. But then arose the next dilemma… how does one fix the situation? To hunt hundreds of slugs after dark with a flashlight would be ludicrous. And watching those critters’ assault felt downright painful! It was hopeless! If only there was something to kill the pain!...
                Beer! Oh how I LOVE beer! And I evened LOVED it before I found out it could be useful for organic farming!
                Slugs also love beer! That was something I learned early on while farming organically. The thing is, I did not realize how bad the slug situation was in the greenhouse… BUT… I sure knew how to fix it. The fix… slug traps. All one needs to do is put beer in a shallow vessel of some sort and place that vessel on the ground near where the slug damage was incurred. The slugs will slide into the beer… and drown. A beer nap! Here is a picture using a Tupperware lid to store the beer.
                                           
Notice the two dead slugs in the beer! It actually works!! And I don’t even miss the beer for the trap! (I use the cheapest I can find, by the way.) And just like that the slugs’ pain is gone. They have been killed!
                As long as the beer containers are kept with beer, these traps work great against the ever marauding slug population. And the pain from the lost crops is killed as well! So you see, the beer in Greenhouse 2 that day was actually there to “kill the pain”.
                With that, I think I will open myself a beer to actually drink at this point… to kill the pain, of course. On an organic farm, there is always pain to kill…

Proposition 37



                The title to this entry refers to Proposition 37 that will appear on the California ballot this November 6, 2012. It is also known as “The California Right to Know Genetically Engineered Food Act”. If the majority of Californians vote “yes” to Proposition 37 on election day, with a few exemptions, raw and processed foods will be required to label all Genetically Modified Organisms (GMOs) found in those products. Finally, at least a portion of the citizens of the United States of America has a chance to know whether GMOs are in their food or not, at least a portion of those foods.
                This is a HUGE opportunity for California, and even for us here in Maryland. If California demands labeling of GMOs, there is a great possibility that the companies that need to buy/place those labels on their products, will also do the same when the identical product is sold in the other 49 states. This is an EXTREMELY important issue, and I will attempt to present my own point of view on this.
                The first issue I will present will be that of GMOs in general, that is genetic modification. In organic farming, GMOs are not allowed of any kind, obviously. My personal decision on growing organically is that a natural/organic diet is what our species, along with all other species on the planet have evolved consuming for countless generations. The means by which, say, a plant grows, is extremely complicated. A myriad of processes are involved along with an environment that consists of a myriad of predators, prey, and other incidentals too numerous to count. While laboratory science has been able to classify some of those processes, there are still countless other parts to the equation of life that lie unnoticed or perhaps viewed as unimportant. Luckily, however, such intense laboratory science is not necessary in order to continue our hereditary diet. The easiest means by which to maintain the natural/organic diet ALL of our predecessors evolved eating, that is, other than the last generation or three, is to mimic how nature produces our… produce. Thus, organic farming uses natural/organic dirt that is fed natural/organic matter such as compost, with natural/organic plants or animals, grown in a natural/organic way in a natural/organic environment.
                GMOs could not be more diametrically opposed to the organic approach. For me, the thought that humans can genetically modify or alter a life form in order to “improve” it is absurd. But that is exactly what GMOs are purported to do. Before I proceed, I will go back to the natural/organic approach.
                The organic farmer is required to be a steward of the earth, that is, to improve the land/soil that is farmed. Every year that a field is farmed organically, the soil improves, that is, becomes healthier with millions of organic life forms in the living soil whose symbiotic relationship with crops causes those crops to thrive. Another aspect of at least my farming style is that the healthiest plants in any crop are used to save seed. By doing this, which is ultimately an organic form of natural selection, the healthiest and tastiest of crops improve by evolving to the exact environment in which it was grown.
                The effort put forth for such organic farming is absurd to those who take the GMO approach. The “conventional” approach is to add a mathematical equation of synthetic fertilizer, which does absolutely nothing to “heal” the soil, but since this entry is about GMOs, I will quickly proceed to that topic. GMOs enter the situation in the form of seeds. Chemical companies have genetically modified crops for a number of different qualities. The easiest for me to explain is corn. Corn, which is somewhere around 100% of processed food, (or at least it seems like it to me), is mostly grown on tremendously huge fields over thousands and thousands of acres. In order to accomplish this, the “agriculture” of corn growing had to become industrialized. GMOs have worked very well with this, to a degree.
                Weeds grow in corn fields as well as a normal field. However, chemical herbicides have been created that will kill those weeds. Now, there are GMO corn seeds that have been modified not to die when certain chemical herbicides are sprayed on them. There are other attributes that the seeds have been genetically modified for, such as germination rates, plant size, etc. There are more issues involved as well, but this should suffice for this entry.
                The issue here is that none of the “conventional” is truly natural. The argument for GMOs is the production numbers. They are staggering. The issue again is “natural”. Although GMO producing companies assure us that there are no negative effects of using GMOs, there is no proof this is the case. The problem is that no proof has been required by the US government before allowing their commercial use. The issue again is “natural”. Throughout my own life, cancer rates have soared. What causes cancer? More and more children are born with allergies. How has that come to be?
                Again, the GMOs will argue there is no proof, but more and more studies are linking these ailments along with many others with unnatural processed foods. And GMOs are a likely candidate at which to cast blame in my opinion, and this leads me to the second issue. Up to this date, GMOs have not been required to be listed on food packaging, for the government saw no difference from the natural product and the GMO. What difference could there be? I just mentioned it. Issue 2 is, even if we made the personal choice not to eat food with GMOs, there is no way of knowing if it actually does.  And this issue makes me quite irate.
                If GMOs do lead to cancer, etc., then the American populace is being poisoned covertly and the American government sanctions it! This situation is incredibly exasperating to me. Why can’t the people of America know what is in their food? As the argument goes, if GMOs are harmless, why not advertise them and let the consumer decide? The issue is quite straight forward and simple. Americans deserve to know what is in the food they eat. If they decide not to know, that is their choice. But those who are concerned about GMOs should be able to know. This issue is a no-brainer, so to speak, unless the voter is somehow benefited by the GMO company… or has no grasp of the real situation.
                And so it goes down to a vote… November 6… in California… It could be a great day for American food, or it could be another one of ignorance. But that will not stop the “Right to Know” group. This is just a start. It has taken almost seventeen years, but again it is a start. What I have witnessed and been part of over the past decade plus has been very encouraging. More and more people are becoming educated on of what their food actually consists. There has been an ever increasing demand for organic produce. So, even if this vote does not pass, it will not stop the surge of demand for natural/organic produce. And while admitting the risk of being too optimistic… maybe, just maybe, the American government will wise up to Big Agriculture and realize it is harming the American people by providing cheap food that is unnatural and artificial. What a great day that would be!

Worcestershire Sauce



                To begin, I am very happy that I am typing this and not speaking it. The topic of this entry is Worcestershire Sauce, which is reflected in the title. Anyway, how one actually pronounces “Worcestershire” has eluded me throughout my life, albeit, I have not spent much time searching for it. I have heard this word pronounced in many fashions, from “Woyster sauce” to “Warstersure sauce” to “What’s this hear sauce?” After looking it up on Wikipedia, I have learned that the actual pronunciation is “Wustersure sauce” or something like that.
                But why am I writing about Worcestershire sauce? Actually, I don’t remember… that is, what the actual recipe… Ugh, let me try again on that…
                It was this past spring that a recipe, that I don’t remember, appeared, arose, in Stephanie’s mind to make as a meal, and it required Worcestershire sauce. Alas, within my own abode, no Worcestershire sauce resided.  We needed Worcestershire sauce. Immediately, I thought of my parent’s house down the road. I was quite certain that they had plenty, and I mean PLENTY, of Worcestershire sauce. My memory told me there were many bottles in the kitchen cupboards. So, rather than travel five miles into town, I drove a mile down the road to my parent’s house.
                My parents were not home when I arrived, not that it mattered. It took very little time to find the Worcestershire sauce. In fact, much like I had suspected, it did not take long to find many Worcestershire sauce bottles. There were standard Lea & Perrin bottles wrapped in the famous yellow paper and even a “White Wine Worcestershire Sauce” wrapped in green paper. Eureka! I had found what was sought, so I grabbed a bottle of the standard sauce and headed for the door.
                As I entered the dining room, something caused me to stop. More specifically, after learning about all the crazy… poisons that have forced their way into our food, I stopped… and read the ingredient list. “Water, vinegar, molasses, high fructose corn syrup…”
                WHAT?!!! Lea and Perrins’ Worcestershire sauce has high fructose corn syrup in it?!!! Is nothing sacred?!!!
                I have a bottle of the Worcestershire sauce with me as I am writing this. I was curious just now when they first made the sauce, so I looked on the label… It doesn’t say… OF COURSE IT DOESN’T SAY! THE ORIGINAL SAUCE DIDN’T HAVE HIGH FRUCTOSE CORN SYRUP IN IT!
                I googled the information I sought. The sauce was first sold in 1838, over 130 years before high fructose corn syrup entered the food stream. And now, as I write this, I am still as shocked as I was when I first read those ingredients to find high fructose corn syrup on the label. But allow me to explain…
                High fructose corn syrup is essentially corn that has been chemically altered, that is processed, in order to increase sweetness. It is part of the Big Agriculture machine that thinks corn, in any form, should be 100 percent of the human diet. (I may be exaggerating, but it sure seems that way.)The problem is that the human body does not know what to do with such processed foods. As much as Big Agriculture insists that high fructose corn syrup is like any other sugar, it isn’t. I will mention my own experiment again from a few years ago, where I consciously cut high fructose corn syrup out of my diet and lost 45 pounds in a few months. By no means was that an exhaustively conclusive experiment, but it was enough to reveal to me that high fructose corn syrup has a significant negative impact, specifically weight gain. And when one looks around and sees the horde of overweight people in our society, a society largely fed by processed foods, such as high fructose corn syrup, it is easy to suspect nefarious effects… weight gain being only one of them.
                And even in Worcestershire sauce!  Seriously, is more sweetness, or more likely, a cheaper sweetener, important enough to change a recipe of almost 175 years? Really? Is a greater profit really THAT necessary? Ugh.
                As I perused the Wikipedia page for Lea and Perrins, I read that the recipe was changed back to real sugar in 2011 due to health concerns over high fructose corn syrup. Kudos. At least Worcestershire sauce has returned to true form, as countless other items have not.
                I wrote the preceding paragraph and realized that my parents had a somewhat old bottle of Worcestershire sauce. On the day when I read the ingredients of that first bottle I took, I wondered whether my parent’s had an even older bottle of Worcestershire sauce in their house… So I searched… very deeply in the kitchen closet… Eureka!... again!
                I looked at the ingredients on the older bottle… “water, vinegar, molasses, corn sweeteners…”
                For some reason, when I first read those ingredients, I was reassured that I had secured a bottle of Worcestershire sauce before they started using high fructose corn syrup. Now, I am not so certain… What were “corn sweeteners”? Is it possible that before high fructose corn syrup was required to be printed on the label of ingredients, it was listed as a “corn sweetener”? I googled a search… and found nothing. How old was the bottle? I could not tell. Alas! I cannot trust that older bottle of Worcestershire sauce either!
                It is absolutely exasperating trying to find food products without… poisons in them! I can’t help but think of the statement, that originated, apparently, from Socrates in ancient Greece, “Ignorance is bliss”. Indeed, one must have to be “ignorant” of the ingredients in processed foods in order, first, to enjoy them, second, to reach the level of “bliss” in the process. The more I have personally learned about how some of these foods are “processed”, the more disgusted I grow over what is nothing more than greed for an extra dollar, backed by no scientific proof that such processing is not harmful to humans whatsoever. Sure, there is plenty of proof that rats suffer greatly… but humans… nooooo. We’ll just wait for some odd form of cancer down the road…
                Before I finish this entry, I return to the White Wine Worcestershire Sauce mentioned before. I was curious as to the ingredients on that label. While I did not find “high fructose corn syrup”, I did find a host of processed ingredients, including one I wrote about only a short while ago… carrageenan!
                WHERE DOES ONE FIND REAL FOOD ANYMORE?!!!
